Today, Forgotten Forest & La Distilleria Craft Spirits of Jayuya are weaving together these iconic industries, by taking the best of our carbonic macerated green coffee, and conditioning it in beautiful, charred oak barrels. Our team carefully mixes the barrels, takes moisture readings, and sample roasts daily, allowing the essences of these distinct worlds to collide for the perfect duration. The result is an entirely new sensory experience. This collaboration embodies the powerful and necessary spirit to evolve and preserve the nature, culture, and craft of La Cordillera de Puerto Rico. A Tale of Two Traditions

Historically, Puerto Rican coffee & sugar cane have played pivotal roles in shaping the island's identity. In the 18th century, coffee quickly became a significant export, gaining global recognition for its exceptional flavor profiles and unique terroir. Similarly, sugar cane thrived, giving birth to plantations, centrales and world-renowned distilleries that produced rum for an elite global audience. The cultivation of both not only transformed the economy, but culture and society.

The coffee resulting from this experiment is extremely unique, yet versatile. The lightly spiced wood undertones, textured mouthfeel, and notable aromatics add complexity, enhancing rather than overpowering the coffee’s original flavor profile. We always prefer it black, but this profile lends itself to a wide range of filter & espresso based drinks.
