Typically, cacao goes through a "dutching" process to remove cocoa butter for ease of use and shelf life. However, this commercial process removes most of its nutritional value, along with its rich, smooth, full-bodied character.

Cacao is widely considered to be a superfood by the medical community and sacred to indigenous American tribes. This is because of its reported antioxidant, anti-inflammatory, and mood-boosting properties. Cacao contains flavonoids and amino acids which increase blood flow in the brain, reduce systemic inflammation, and stimulate dopamine and serotonin production.
