The Perez brothers have persevered through numerous obstacles to produce consistently distinctive coffees, that pay tribute to their family farm, Hacienda Guindaleza’s unique microclimate within the Toro Negro state forest and alongside one of the island’s highest peaks, Cerro Maravilla. The coffee has an unmistakable aroma, and flavor profile that showcases notes of green apple, apricot, and lemongrass—notes more commonly found in high elevation farms of Africa and Yamen. With the guidance of their father, the brothers have spent the past 8 years learning the craft of producing specialty coffee. For their first several years, they’d truck freshly picked coffee cherries from the remote hacienda, to their father’s property in the city of Bayamon, over 2 hours away, to ferment, wash, and dry their harvest on the building’s rooftop for more consistent results. The brothers balance their passion for agriculture, with managing the family pawn shop business, with their mother, and Alfonso’s wife. Today we’re proud to call them good friends, and collaborators.
